Mayonnaise Banana Bread Muffins

Mayonnaise is the secret ingredient you didn't know your banana bread recipe needed! Mayonnaise will help keep your banana bread moist for days and gives it a super-rich flavor!

Ingredients

  • 3 mashed bananas
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 1 egg
  • 2/3 cup mayonnaise
  • 1 1/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1.  Preheat oven to 350 degrees

  2. In a large bowl, stir together wet ingredients.  Mashed Bananas, brown sugar, pure vanilla extract, egg, and mayonnaise.  Set aside.

  4. Add the dry ingredients to the banana mixture to form a batter.

  5. Fold in any additional ingredients you choose to add ( chocolate chips, nuts, etc.)

  6. Add batter to each muffin tin 3/4 using the cookie scoop.

  7. Bake in the oven for 20-25 mins or until the muffins are golden brown and a toothpick comes out clean. 

  8. Remove the muffins and place the muffins on a cooling rack.  Let the muffins cool for at least 10 minutes before serving.
