These carrot cake donuts taste delicious!! The cake is moist, spongy, flavorful, and loaded with cream cheese frosting!
Preheat the oven to 350 degrees. Grease a donut pan with cooking spray or butter. Set aside. You can also use a muffin tin if you don't have a donut pan.
Combine dry ingredients. Flour, sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt in a medium mixing bowl. Set aside.
Mix eggs, milk, butter, and vanilla in a large mixing bowl.
Mix the flour mixture slowly into the wet ingredients, including grated carrots, into your batter until just incorporated.
Fill each donut cavity ¾ of the way with batter. Bake for 8 -10 minutes. Move to a cooling rack and allow to cool.
Stir together cream cheese and vanilla until smooth and creamy. Slowly add in powdered sugar. Frost donuts with cream cheese frosting once the donuts have cooled. Sprinkle with shredded coconut or chopped walnuts. And serve.
