Add softened cream cheese, butter, cinnamon extract, and red food coloring. Add as much food coloring as you like to get your desired color. Mix well. If you use a mixer, keep it at low or medium speed.
Add powdered sugar, 1 cup at a time, and stir the sugar until you get a dough-like batter mixture that is not sticky. You will have to estimate with the powdered sugar and stir a little at a time toward the end to get the right consistency. It will be like a pie dough consistency.
Add crushed Red Hot candies and mix in well.
Roll 1/2-inch balls on a baking sheet lined with parchment or wax paper.
Press down the cream cheese mints with a fork. You can also choose to use a candy mold to mold them.
Refrigerate for at least 1 hour before eating.
