Instant Pot Thai Inspired Peanut Butter Noodles

If you enjoy peanut noodles at your local Thai Restaurant, then you will enjoy this one-pot version you can make at home

Ingredients

  • 1 teaspoon toasted sesame oil
  • 2/3 pound chicken breast cut into small chunks
  • 3 cloves minced garlic
  • 2 scallions or green onions chopped
  • 2 carrots peeled and chopped
  • 12 ounces Spaghetti noodles
  • 3 cups water or chicken broth
  • 2/3 cup peanut butter
  • 6 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 teaspoon ground ginger
  • 4 tablespoons brown sugar
  • 2 tablespoons rice vinegar

Garnish

  • 14 ounce can bean sprouts
  • cilantro
  • chili sauce
  • sriracha sauce
  • chopped peanuts

Instructions

  1. Set your Instant Pot to the Saute Setting.

  2. Add sesame oil, chicken, garlic, and green onions.

  3. Saute until Garlic is translucent and chicken is browned but not cooked all the way through.

  4. Hit cancel to stop the heat.

  5. Add water, peanut butter, lime juice, rice vinegar, oyster sauce, brown sugar, soy sauce,  ginger, and pasta.   Make sure the pasta is completely submerged in liquid.  You might have to break it in 1/2.

  6. Lock and secure the Instant Pot lid.  Rotate the Pressure release valve to "sealing"

  7. Cook on high pressure for 6 minutes, you can cook for 4 minutes if you omit the chicken

  8.  Quick release the pressure.  Stir the pasta with the peanut sauce while everything is still piping hot
