Ingredients

  • 1/2 cup softened butter
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 1 egg
  • 1.5 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Footballs

  • 24 chocolate covered almonds or more
  • 1/2 cup white candy melts

Instructions

  1. Preheat Oven to 350 degrees

  2. In a bowl, mix beat together butter, peanut butter, sugar, and egg with an electric mixer or a stand mixer.

  3. In a second bowl, whisk together flour, baking soda, and baking powder. Add the butter/peanut butter mixture.

  4. Chill in the refrigerator for 30 minutes

  5. Shape dough into 1-inch balls on a cookie sheet lined with parchment paper.

  6. Press a chocolate-covered almond in the center of each cookie

  7. Bake for 10 minutes or until golden brown

Decorating Footballs

  1. Make Sure your cookies have cooled to room temperature before decorating the footballs. You want to make sure the melted chocolate has harder on the chocolate-covered almonds.

  2.  Place 1/4 cup of white candy melts into a bowl and microwave for 3-4 20 second increments, stirring the candy melt in between each go. Once the chocolate has melted, use a toothpick to make the football laces onto each chocolate-covered almond.   You can also use a double boiler to melt the chocolate.
