Slow Cooker Chicken Gyros

I love serving these slow cooker chicken gyros at parties.  It is nice to serve something a little bit different than your typical pulled meat sandwiches.  This slow cooker pulled chicken is packed with tons of flavor and tastes amazing on warm pita bread with Greek toppings galore! 

Ingredients

  • 2 lbs boneless skinless chicken
  • 1 tablespoon lemon juice
  • 3 cloves minced garlic
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 small red onion sliced
  • 1 cup Greek Yogurt
  • 2 teaspoons dried oregano
  • 1 tablespoon Cavender’s Greek Seasoning 
  • 2 tablespoons dillweed

Tzatziki Sauce

  • 1 cup plain Greek Yogurt
  • 1 tablespoon dillweed
  • 1 teaspoon lemon juice
  • 1 English cucumber chopped
  • 1 pinch salt and pepper
  • 1 clove garlic

Garnishes

  • lettuce
  • tomatoes
  • cucumber
  • kalamata olives

Instructions

  1. In a slow cooker- add all of the ingredients for the chicken gyros.  If you are using larger chicken breasts- you may want to cut them into smaller pieces.

  2. Stir all of the parts together.  Cook on low for 6 hours or high for 4 hours.

  3. Once the chicken is cooked, shred the chicken and return to the crockpot. 

Build your Gyro

  1. Mix all of the ingredients for the Tzatziki Sauce

  2. Place some chicken in pita bread, top with Tzatziki sauce and other garnishes of your choice, and enjoy!
