Fresh Mint White Chocolate Macadamia Nut Cookies

Ingredients

  • 1/2 cup butter at room temp
  • 10 mint leaves chopped
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 & 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup macadamia nuts

Instructions

  1. Using an electric mixer, cream butter, mint leaves, white sugar, brown sugar, vanilla, egg, and egg yolk

  2. In a separate bowl, whisk flour, baking soda, and salt.

  3. Slowly add dry ingredients to the wet ingredients while mixing.

  4. Add macadamia nuts and white chocolate chips.

  5. Place cookie dough in a bowl and cover. Chill in the fridge for at least 1 hour.

  6. Preheat oven to 350 degrees.

  7. Line the baking sheet with parchment paper and place 1 inch balls of dough evenly on the baking sheet.

  8. Cook for 10 minutes.

  9. Remove from oven. Let cool and serve.
