Apple Cinnamon Brussels Sprouts

Ingredients

  • 2 pounds fresh brussels sprouts washed and cut into thirds
  • 1/4 cup canola oil or another oil with a high smoke point
  • 1 teaspoon cinnamon
  • 3 tablespoons brown sugar
  • sea salt
  • 1 Fuji apple
  • 1 granny smith apple
  • 1/4 cup dried cranberries
  • 1/4 cup pepitas

Instructions

  1. Preheat oven to 450 degrees

  2. Trim and cut brussels sprouts into thirds.

  3. Core and cut apples into 1-inch chunks.

  4. Arrange Brussels sprouts and apples on a baking sheet.

  5. Mix oil, cinnamon, and sugar together in a bowl. Drizzle the oil on top of the brussels sprouts. sprinkle with salt.

  6. Cover the Brussels sprouts with foil.

  7. Cook for 10 minutes.

  8. Remove foil. Cook for another 10 minutes

  9. Remove from the oven. Top with cranberries and pepitas while the brussels sprouts are still piping hot.
