Omelet Hash brown Waffles

Servings 6 people

Ingredients

  • 10 eggs
  • 2 cups frozen hashbrowns
  • 1/4 cup cheese
  • 1 slice ham, chopped
  • 1 green onion, chopped
  • 1/4 cup baby tomatoes, chopped
  • salt, pepper or seasoning to taste
  • cooking spray

Instructions

  1. In a medium-sized mixing bowl, whisk together eggs, hashbrowns, omelet toppings, and seasonings.

  2. Turn on the waffle iron. Spray the waffle iron well with cooking spray.

  3. Pour 1/3 cup of egg/hashbrown mixture onto each waffle pan. Close waffle maker and cook for 3-4 minutes.

  4. Open waffle Iron. Remove egg waffles.

  5. Eat or store. Store in an airtight container in the refrigerator for up to five days OR freeze in an airtight container for up to 6 months.

  6. REHEAT: if you are reheating these waffles toast them in the toaster until they heat up and become crispy.
