Instant Pot Herbs de Provence Pork Roast

Ingredients

  • 2-3 pound Pork tenderloin roast
  • 3 tablespoons Herbs de Provence
  • 1 tablespoon minced garlic
  • 5 tablespoons lemon juice
  • 1 small onion chopped
  • 3 tablespoons olive oil
  • 3 tablespoons dijon mustard
  • 2 cup of water
  • 1 tablespoon cornstarch

Instructions

  1. Season your Pork tenderloin. Spread Mustard and Olive oil all over your pork roast. Followed by garlic, herbs de Provence, and lemon juice.

  2. Place the Pork roast and the chopped onion at the bottom of your Instant Pot.

  3. Pour water over the pork roast.

  4. Close Instant Pot lid. Secure Vent.

  5. Cook on high pressure for 30 minutes. Let NPR

  6. Remove Pork Roast from the Pot.

  7. Set the Instant Pot to Saute, and stir in Cornstarch

  8. Place the pork back in once a sauce is being brewed. As the sauce sautees, keep pouring the sauce onto the pork roast to evenly distribute the flavor.

  9. Serve with a little sauce on top of each piece.
