Chicken Gyro Quesadillas

Ingredients

Greek Chicken

  • 2 chicken breasts
  • 1 teaspoon Greek Seasoning
  • 1 teaspoon minced garlic
  • 1 teaspoon olive oil
  • 2 tablespoon lemon juice
  • 1/4 cup chopped onion
  • 1/4 cup greek yogurt or sour cream
  • 1/2 cup water

Quesadilla

  • 2 flour tortillas per quesadilla
  • 1/4 cup Mozzarella cheese per quesadilla
  • 1/4 cup cooked greek chicken per quesadilla

Toppings

  • tomato
  • cucumber slices
  • red onion
  • feta cheese
  • kalamata olives
  • lettuce

Tzatziki Sauce

  • 1 cup Greek Yogurt
  • 1 tablespoon dried dill
  • 1/2 cup chopped cucumber
  • 1 teaspoon onion powder
  • dash pepper
  • 1/2 teaspoon lemon juice

Instructions

Greek Chicken

  1. Place all of the ingredients for the Greek chicken in your Instant Pot. Chicken, onion, Greek Yogurt, garlic, lemon juice, Greek seasoning and olive oil.

  2. Cook on high pressure for 12-15 minutes.

  3. Either let it naturally release or release pressure right away. It doesn't matter.

  4. Shred chicken for the gyro quesadillas.

Build your quesadilla

  1. heat up a skillet over medium heat.

  2. Between two flour torillas, place chicken, cheese and other toppings if you desire. brush the outside of the tortilla with olive oil if desired.

  3. Cook on the sklllet, flip over when the first side is done cooking and slightly crispy.

  4. garnish with vegetables and dip in tzatziki sauce as needed.
