Ingredients

  • 2 pounds sweet potatoes peeled and cubed
  • 2 tablespoons butter
  • 2 tablespoons molasses
  • 1/4 cup freshly squeezed orange juice
  • 1/2 cup water
  • 1 teaspoon freshly grated ginger
  • 1/2 cup crushed ginger snap cookies
  • salt to taste
  • 1 teaspoon orange zest garnish

Instructions

  1. Place peeled cubed sweet potatoes at the bottom of your Instant Pot. Add water, juice, molasses, butter, ginger, and salt.

  2. Place the lid on your Instant Pot, seal the vent, and cook on high pressure for 10 minutes.

  3. Once the cooking is done, vent.

  4. Open lid. Stir sweet potatoes until they mash. It won't take much for them to mash.

  5. Add more salt or ginger to satisfy your taste.

  6. Add chopped ginger snaps to the top of the sweet potatoes, and garnish with orange zest.
