Pressure Cooker Chicken Florentine Soup

Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup green onions
  • 2 cloves minced garlic
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon Italian seasoning
  • 1/8 cup lemon juice
  • 32 ounces chicken broth
  • 1.5 pounds chicken
  • 10 ounce container of fresh spinach
  • 1/2 cup rinsed quinoa

Instructions

  1. Set your Pressure cooker to saute

  2. Add olive oil, garlic, green onions, celery, and carrots. Saute until onions and celery are cooked. 

  3. Add lemon juice, Italian seasoning, chicken, spinach, quinoa, and broth

  4. Close pressure cooker lid cook on high pressure for 15 minutes 

  5. Remove lid.  Pull chicken breasts out and shred.  Place chicken back in. 

  6. Serve
