Chicken Bruschetta Quinoa Bowls

Ingredients

  • 2 cups quinoa
  • 3 cups water
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Bruschetta

  • 2-3 cups chopped tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 3-4 chopped basil leaves
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt and pepper

Bruschetta Bowls

  • 1 rotisserie chicken, shredded
  • 2 zucchini, chopped
  • 1 bag Crystal Farms CheeseĀ® Mozzarella
  • 1 teaspoon balsamic glaze
  • 1-2 basil leaves garnish

Instructions

  1. Rinse quinoa. Add rinsed quinoa to water and add seasonings.  

  2. Cook quinoa.  If you are cooking your quinoa in your pressure cooker, you will want to cook it on high pressure for 1 minute.  You can also cook the quinoa on your stove. 

  3. Prepare the bruschetta.  In a bowl mix chopped tomatoes, basil, balsamic vinegar, olive oil, salt, and pepper.  Set aside. 

  4. Chop zucchini and cut chicken off of your rotisserie chicken.

  5. Build your bowls.  Add a few scoops of quinoa, tomato bruschetta mixture, zucchini and chicken to your bowl. Top your bowls with Crystal Farms CheeseĀ®  Shredded Mozzarella Cheese, some extra basil, and balsamic glaze.
