Creamy sun-dried tomato chicken

Instant Pot 

Ingredients

  • 1 8 ounce jar sun dried tomatoes in olive oil
  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • 1 16 ounce block of cream cheese
  • 5-6 basil leaves
  • 3 cups fresh spinach
  • 1.5 pounds boneless chicken breast

Instructions

  1. Set your Instant Pot to saute setting.  

  2. Make sauce.  Add sun-dried tomatoes, paprika, onion powder, basil and cream cheese together.  Heat and stir into a sauce. 

  3. Add spinach and stir in

  4. Add chicken

  5. Close lid to the Instant Pot and cook on high pressure for 12 minutes 

  6. Remove lid and serve.
