Butter Pecan Energy Bites

You will love the buttery flavor in these easy, no-bake butter pecan energy bites.  These taste like a rich baked treat but are made quickly with easy pantry ingredients.

Total time: 1 hour and 15 mins

No-bake energy bites are a healthy and delicious snack perfect for on-the-go.  All you need to do is mix together the ingredients and roll them into balls. No baking is required, making them a quick and easy snack.

Ingredients:

1 cup oats

1/2 cup chopped pecans.  If your pecans weren’t chopped, pulse them for a few seconds in your food processor.

1/2 cup Peanut Butter

¼ cup of Honey

1/4 teaspoon sea salt

1/4 teaspoon butter extract

Substitutions:

You can substitute pecans with other nuts.  Both almonds and walnuts will work great.

Add a few drops of vanilla extract

You can substitute the peanut butter, another type of but butter.

You can substitute the honey for maple syrup if you want these vegan.

Instructions

  1. In a large bowl, combine all of the ingredients.
  2. Mix well until everything is evenly combined.

  1. Roll the mixture into small balls about 1 inch in diameter.
  2. Place the balls on a baking sheet lined with parchment paper.
  3. Refrigerate for at least 30 minutes before serving.

Storage: Store in an airtight container in the fridge for up to two weeks or in the freezer for up to 3 months.

Use this recipe as a canvas for your creativity! You can make your own energy bits (protein balls). People often add chocolate chips, shredded coconut, cinnamon, Medjool dates, cocoa powder,  vanilla extract, and various ingredients to their energy bites.

These butter pecan energy bites are fancy enough for a holiday spread but are a great energy source and nutrient. They are gluten-free, high in fiber and protein,   and can help you feel full longer.  They are also a good source of vitamins and minerals, such as magnesium, potassium, and iron.

These are not vegan or dairy-free.  Butter extract is not a vegan product.
