Brown Butter Beef Tips

Brown Butter ( Buerre Noisette) is a classic French staple in the kitchen.  Brown Butter is melted butter with accelerated flavor, can be made in less than 10 minutes, and has a nutty and bold flavor.  These Instant Pot Brown Butter Beef Tips make a mouthwatering meal in just minutes.  Although you will take a few extra steps to brown the butter at the beginning of the cooking process, this easy weeknight meal calls for only a few ingredients and will wow your family! This instant pot recipe is rich and decadent.  I happen to have no problem feeding my family meals with honest-to-god whole rich ingredients.  We also have our nights of eating lean chicken and broccoli, and we have nights where we feast on Brown Butter Beef Tips.   Just like the French eats, this dish is rich, and a little goes a long way.  Don’t think about volume eating when you make this, and savor every bite.

What are the Brown Specs in Brown Butter?

The brown specs in brown butter are toasted milk solids.  They’re actually where most of the flavor in brown butter comes from, so make sure you scrape them out of the pan!

Tips for Browning Butter in your Instant Pot

  1. You will use the saute function on your Instant Pot to brown the butter.  The Instant Pot will get hotter than a saucepan on the stove, so browning the butter will be time-sensitive.  Hit the saute button and cook the butter for 4 minutes. Then press the cancel button,  and continue stirring the butter while the pan starts to cool down.
  2. Cut butter into pieces evenly so that the butter will cook evenly
  3. Don’t stop stirring
  4. Brown butter is melted butter with an accelerated flavor.  Melt butter until the butter sizzles and foams.  It will turn into the most incredible flavored ingredient.

These pressure cooker beef tips are super easy.  You don’t need to buy fancy beef. Beef stew meat from the grocery store will work great!  The steak, potatoes, and carrots cook together in the Instant Pot with brown butter, herbs, and water to make a quick meal that is nourishing, rich, and delicious.

This meal only calls for a few ingredients.

One pound of beef tips, steak, or stew meat.  You can also use chopped-up chuck roast or sirloin steak.  You will want to cut down more significant cuts of beef into 1-inch cubes.

Six carrots, peeled and chopped

1 pound of baby potatoes, washed

Brown butter


Your favorite herb to pair with beef.  I used thyme. Sea Salt


Cornstarch if you want to thicken the sauce to make a cornstarch slurry.  You will get a sort of gravy to pour over your meal.

You can top this off with black pepper, parsley, or onion.

You can also add additional ingredients if you like to cook off the cuff.  Mushrooms would also taste fantastic with this meal.   If you don’t have potatoes, you can serve these electric pressure cooker beef tips over mash potatoes, white or brown rice, egg noodles, or sweet potato mash.

Remember to let the meat rest after the cooking has been completed.

Regardless of the meat, you use for this meal, and if you want it to taste tender and perfect, I cannot stress enough how important it is to let your meat rest! Letting your meat rest makes a huge difference in the tenderness of the finished product! I recommend letting the meat rest for at least 10 minutes before eating!  This is a delicious Instant pot beef tips recipe!

I recommend serving this dish with a salad to round out the meal.  You can quickly adapt this recipe for your slow cooker.  Just. Brown the butter on the stovetop over medium-low heat. And place the brown butter in a slow cooker with the potatoes, beef, and carrots.   This recipe is filled with protein and vitamin C.  You can also omit the potatoes if you follow a paleo or keto diet.   If you would like to serve these beef tips as an appetizer, you can serve using toothpicks.

  • 1/2 cup butter cut into even slices
  • 1-2 pounds beef tips or stew meat
  • 1 dash salt
  • 1 teaspoon thyme
  • 1 cup water
  • 6 carrots peeled and chopped
  • 1.5 pound baby potatoes


  1. Cut the butter into even slices.

  2. Make your brown butter. Set your Instant Pot to the saute setting and add the butter.

  3. Constantly stir the butter for 4 minutes. Hit the cancel button. Continue to stir the brown butter for 3-4 minutes as the Instant pot is cooling down.

  4. Add beef, salt, and thyme. Mix everything together.

  5. Add 1 cup of water.

  6. Add the trivet or a vegetable steamer into the inner pot of your Instant Pot.

  7. Cook on high pressure for 10 minutes. Quick Release Pressure.

  8. Let the beef rest for 10 minutes before eating

  9. Arrange the food on a plate. drizzle everything with brown butter sauce before serving.

You don’t need to sear your beef tips, but you can saute them before or after the pressure cooking process if you want to.  This dish isn’t low in calories, but it will fill you up and is rich tasting.

    Great recipe! I also had leftover grape tomatoes and green onion. I added that when I put the garlic in and its so tasty!
