Instant Pot Honey Butter Chicken Thighs

Honey Butter Chicken Thighs is the ultimate weeknight comfort dinner.   This entire meal- chicken potatoes and green beans are cooked all in one pot in less than 30 minutes.  This meal is sweet- so the kids love it.  Cooking this meal in the Instant Pot leaves you the option to crisp up the chicken and the potatoes using the saute function before serving.  This is such a nourishing, family-friendly meal. 

During my years of cooking in an electric pressure cooker, I have figured out which vegetables cook really well with meat as a one-pot meal and which vegetables will turn to mush.  Broccoli and Cauliflower will turn to mush if you cook them for very long, so I will opt for a steam fresh bag of both when I am cooking in a pinch.   However, both potatoes and fresh green beans cook well alongside the chicken in the Instant Pot.

Honey Butter Chicken Thighs are a mouthwatering, inexpensive meal.

All you need is a few ingredients you probably already have in your pantry.

6 chicken thighs- bone-in or boneless

4 tablespoons of unsalted butter

1/3 cup of honey

1 tablespoon of minced garlic

1 cup of water

1 pound of red-skinned potatoes cut into quarters.

1 pound of fresh green beans, rinsed and trimmed.

I used the PIP method to cook this Instant Pot meal.  If you’re not familiar with the pip cooking method, pip stands of pot in pot.   I sauteed the chicken thighs and placed a cup of water in with the thighs.  I then added a stainless steel bowl on top of the chicken to make a second layer.   The potatoes and green beans will get perfectly steamed in your Instant Pot.   The potatoes and Green beans will turn out slightly sweet and perfect!

Instant Pot Honey Butter Chicken Thighs

Ingredients

  • 6 chicken thighs boneless or bone-in will work
  • 4 tablespoons butter
  • 1/3 cup honey you can sub maple syrup
  • 1 tablespoon minced garlic
  • 1 cup water
  • 1 pound red-skinned potatoes washed and quartered
  • 1 pound fresh green beans washed and trimmed

Instructions

  1. Set your Instant Pot to the Saute setting. Add butter. Once the butter has melted, add the chicken thighs and saute them for 1 minute on each side. Add honey, garlic, and water to the pot. Press cancel.

  2. Place a vegetable steamer, stainless steel bowl, or the trivet that comes with your Instant Pot into the inner pot on top of the chicken. Add the potatoes and green beans into the vessel.

  3. Close and lock the Instant Pot lid. Set the valve to "sealing"

  4. Cook on high pressure for 15 minutes. Quick Release Pressure

  5. Remove potatoes, green beans, and chicken, from the pot and arrange them on a serving dish. discard cooking juices

  6. If you want your potatoes to be crispy. Hit the saute button, and cook the potatoes with 1/4 cup of the cooking juices until they get browned. Serve

Your kids will gobble this meal. Up!  I love meals that cook all in one pot!  Fewer dishes for everyone!

Yes. But make sure green beans are on top. Also broil the chicken for a few minutes before eating to crisp it up

I made this tonight and it was delicious! The only thing I did different was to use chicken breasts, since that is what I had on hand. I served it with mashed potatoes. Yummy!! This is going in my recipe rotation for sure.

It’s a great recipe. I did make mine with chicken breasts instead of thighs but they came out juicy. My only question would be is there a sauce that could be made to go with this. I have another recipe that I have found and you use the drippings to make a sauce can this be done with this recipe?

yes! I would maybe add a little more honey and cornstarch to the drippings and saute a sauce!
