This Instant Pot eggnog rice pudding will please your entire family this holiday season! You will love preparing it because it only takes a few ingredients and cooks up in your instant pot super fast. Your kids will love it because it is delicious and is made with creamy eggnog. This recipe is festive and can be served for dessert or breakfast. This recipe is gluten-free and will also liberate you from your kitchen so you can enjoy time with your family.
This year I started making my family rice pudding in the Instant Pot! We have been cautious with staying at home this year, and we often went two-plus weeks between grocery trips. I sometimes had to get creative when serving breakfast or lunch. I actually served Instant Pot rice pudding with fruit to my kids for lunch more than a couple of times during virtual school. There are no rules about eating dessert for lunch in 2020. 🙂
I’ve combined two of my favorite things. Instant Pot rice pudding and eggnog. This dish is perfect for the holidays. I don’t know about you, but this has been a crazy year, and the last thing I want to do is stress out about Christmas baking. This is a super easy, comforting, and festive holiday dish you can whip up in a matter of minutes with just a few ingredients. It’s a win for everyone!
You need a few easy ingredients for this recipe, and besides the eggnog, I bet you have them on hand.

2 cups of egg nog- use one cup before you pressure cook and one cup afterward.
