Instant Pot Everything but the Elote Chicken and Rice

My newest food obsession is Trader Joe’s Everything but the Elote seasoning!  I have been putting it on all my food!  This Everything but the Elote seasoning has been gracing my hard-boiled eggs, seasoning my chicken sandwiches, and topping my salads.  This Instant Pot Everything but the Elote seasoning chicken and rice is made all in one pot and was a massive hit with my family! 

A few weeks ago, I took a trip to Chicago to visit my close friend, who is moving away from the midwest.  I hadn’t been to Chicagoland since the beginning of the pandemic and, although I didn’t go out while I was there.  ( my friend and I had a picnic in a forest preserve) I did make a trip to Trader Joe’s to pick up a few goodies.

I purchased a bottle of Trader Joe’s new Everything but the elote seasoning.  Within a week of this purchase, my husband and I had polished off 1/3 of the container, so when I was. Back up in Chicagoland last weekend, I picked up three more bottles of the stuff.

Elote is the proper name for Mexican street corn.  Although it tastes great on corn, it also tastes fantastic on Everything else!

I have started making rice casseroles in my Instant Pot often.  They’re always a hit with my family, and the cooking time is 12 minutes.  I made this recipe with leftover rotisserie chicken, but you can also use uncooked chicken breast in this recipe, and the cooking time will be the same.  If you choose to use raw chicken, you will want to cut it into 1-inch pieces, so it cooks all the way through.

This Instant Pot Everything but the Elote Chicken and rice are easy.   Here is what you need:

  1. Two cups of white rice avoid quick-cook rice. 
  2. Four cups of water
  3. One bag of frozen corn
  4. One cup of rotisserie chicken – or raw chicken breast, chopped into 1-inch pieces
  5. Two  tablespoons of Everything but the Elote seasoning
  6. Tomatoes
  7. Lime juice
  8. Cotija cheese.

This recipe makes a great dinner or lunch.  I recommend adding your toppings right before you eat. This meal is so easy and tastes delicious when served hot or cold.

All you need to do:

  1. Add rice, water, chicken, corn, and Everything but the Elote seasoning into your instant pot.
  2. Close Instant Pot Lid
  3. Cook on high pressure for 12 minutes.
  4. Quick Release pressure
  5. Add toppings galore
  6. Eat!

Ingredients

  • 2 cups white rice avoid quick cook rice
  • 4 cups water
  • 1 12 ounce bag frozen corn
  • 1 cup rotisserie chicken
  • 2 tablespoons Everything but the Elote seasoning

Toppings

  • grape tomatoes
  • cotija cheese
  • lime juice
  • cilantro
  • avocado

Instructions

  1. Mix rice, water, chicken, corn, and Everything but the Elote seasoning into your Instant Pot.

  2. Secure lid and cook on high pressure for 12 minutes.

  3. Open Pot. and serve.

  4. Add your favorite toppings.

You need to get some Everything but the Elote seasoning!  I would love to know how you use it!

Hi. Wondering if I can use brown rice in this recipe? And also might want to cut down the ratio of rice to chicken. Would that work if I adjusted the water amount?

You can. However, you will want to cook the rice longer. Cooking time for brown rice is 25 minutes

I enjoyed it but will make modifications next time. Not enough chicken. Too bland. I would either add more veggies and go vegetarian or use about 4 cups diced chicken. I added more of the seasoning after I played it and before the toppings. That helped. I would at least double the seasoning.
