When I am out-to-eat, and I see a Cuban sandwich on the menu, I will order it. Every time. I love Cuban sandwiches. However, it never occurred to me until recently that I usually keep the ingredients for Cuban sandwiches on hand. Another easy weeknight dinner to add to our repertoire! Cuban sandwiches are usually made out of sliced ham- which I keep around for school lunches, Swiss cheese, yellow mustard, pickles, and pulled pork.

I was able to make Cuban pork in my pressure cooker with just a few ingredients. Usually, when you see Cuban sandwiches in restaurants, they are served on soft white bread, or maybe sourdough bread. However, if you’re looking to make these sandwiches in a pinch on a weeknight, I say look no further than your freezer!

This past week, I made this delicious and easy meal for my family using Van’s® Power Grains® Original Waffles, and it couldn’t have come together easier or have been tastier! I picked these waffles up at my local Natural Grocers store.

This Cuban waffle sandwich is so easy. It is going to save you at dinner time, I promise. I made this Cuban Pork super fast in my pressure cooker. I love making batches of pulled meat in my pressure cooker and freezing it. So when I am in a pinch, I pull it out and heat it quickly for a weeknight meal. This sandwich has a few ingredients, but they are flavorful and make for a satisfying meal! All you need to make these delicious Cuban Waffle Sandwiches are Sliced Deli Ham,  Cuban pulled pork, pickles, mustard, Swiss cheese, and Van’s® Power Grains® Original Waffles or another Van’s Waffles variety.

 

Cuban Waffle Sandwich

Ingredients

Cuban Pulled Pork

  • 1 small onion
  • 2 pounds pork tenderloin
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup lime juice
  • 1 teaspoon oregano
  • 2-3 cloves minced garlic
  • 1 cup water
  • 1 teaspoon olive oil

Cuban Sandwich

  • 1/2 cup cooked Cuban pulled pork
  • 1-2 slices Swiss cheese
  • 1-2 slices deli ham
  • pickles
  • mustard
  • 2 Van’s® Power Grains® Original Waffles

Instructions

Pressure Cooker Cuban Pulled Pork

  1. Set your Pressure Cooker to Saute.

  2. Add olive oil, onions, garlic, and spices. Saute until the onions are translucent.

  3. Add Pork, orange juice, and lime juice.

  4. Seal lid on your pressure cooker and cook on high pressure for 40 minutes.

  5. Let naturally release. Your pork should fall apart once it is cooked. If you're not planning on eating the pork right away, store the pork with the cooking liquid in the fridge or freezer.

Cuban Sandwich

  1. On 1 toasted waffle build your sandwich. Add pulled pork, deli ham, and swiss cheese.

  2. Toast in your toaster oven or a regular oven for 10 minutes, or until the cheese is melted to your preference. Toast the second waffle alongside your sandwich.

  3. Top your sandwich. Add your desired amount of mustard and pickles, and dig in!

This Cuban waffle sandwich is restaurant-worthy but will save you money when you make it at home. Your kids will love these waffle sandwiches, or any waffle sandwich you make with Van’s, and you can feel good giving it to them!
