About a year ago, I was in South Dakota with my family when I discovered chimichurri sauce. About the least likely place that one would find an Argentinean sauce, and I was probably one of the last people too. have been trying to use condiments that don’t contain sugar, I started putting Chimichurri in lots of different dishes. Including:
Chimichurri Chicken and Rice Soup
Chimichurri Steak Loaded Fries
Chimichurri Chicken Cobb Salad
Chimichurri Crispy Chicken Sliders
I thought that adding Chimichurri sauce to my favorite Instant Pot Pork Carnitas would be delicious, and I was right! I love making homemade Chimichurri sauce out of herbs I have in my garden. But if you don’t have the time, you can also order bottles of this fantastic sauce. I like this chimichurri sauce.
I have always loved slow cooker carnitas, but they take such a long time! If you cook carnitas in your Instant Pot, you can get them cooked in just about an hour.
To make these Chimichurri Instant Pot Pork Carnitas, you need the following:
Pork: You can use whichever cut of pork you like, I like to use pork tenderloin because it is super lean!
Chimichurri Sauce: You can make your own ( recipe below), or you can always buy a jar of premade chimichurri sauce.
An eating vessel: You can serve these pork carnitas in taco shells, over a salad, in a burrito, on top of a rice bowl or you can make lettuce wraps as I did.
Toppings: Some of my favorite toppings include cilantro, sour cream, queso de fresco, and tomatoes
To make these Chimichurri Pork Carnitas:
1. Make a Chimichurri Sauce, or simply open up a jar of Chimichurri Sauce.
2. Season your pork and seer it in your Instant Pot
3. Pressure Cook your Pork.
4. Shred your Pork.
5. Broil your pork in the oven, so it gets crispy.
Instant Pot Chimichurri Pork Carnitas
Ingredients
- 2-3 pound pork tenderloin roast
- salt and pepper to taste
- 1/2 cup Chimichurri sauce
Chimichurri Sauce
- 1 cup chopped fresh parsley
- 4 cloves minced garlic
- 2 tablespoons dried oregano
- 1/2 teaspoon salt
- 1/4 cup red wine vinegar
- 3/4 cup olive oil
Instructions

Add all of the chimichurri sauce ingredients into a food processor and pulse for about 10 seconds. If you don't have a food processor, mix with a whisk, but make sure all the ingredients are finely chopped.
Instant Pot pork Carnitas

Set your Instant Pot to saute. Add a small amount of oil to the bottom of your pan, and season your pork with salt and pepper.

Seer the pork lightly.

Turn off the saute setting. Add Chimichurri sauce and water to your pressure cooker.

Cook on high pressure for 1 hour. You can certainly get away with cooking it for 45 minutes, but I like my pork, so it shreds at the touch of a fork.
Vent instant pot when the cooking has been completed.

Shred the pork in the juices.

Place all the shredded pork on a sheet pan, with all the juices.

Broil in the oven until your pork has gotten crispy to your liking.

Remove from oven and serve!
This Chimichurri carnitas recipe does not disappoint! They make a delicious lunch, dinner, or even breakfast! I topped mine with a little sour cream and some additional chimichurri sauce!
