If you follow me on Instagram, then you know that I have been on a meal prep kick as of lately. My family is in the middle of a relocation process, so things are pretty hectic right now. My husband got a new job in a new city, about 2 hours away and he has been there working and staying in a hotel during the week. While I am at home surviving with my three kids as we finish up the school year.
I have been having big cooking sessions on Sunday afternoons and making lunches and dinners. I have been sending pre-made meals with my husband to have in his hotel and saving the rest for easy weeknight meals for us. So far, this has worked well. My life has been so much easier without big cooking sessions and dishes on weeknights, and I think we are eating healthier too.
Finally, a few weeks ago, I decided to invest in these Pyrex Lunch Bowls. I love them, I have seen a lot of fancy looking lunch boxes over the last few years, and I think these are my favorite.
A few years ago, I made this Quinoa Cheeseburger Casserole, and these lunch bowls are a take-off of that casserole. I have been trying to eat better, or perhaps trying not to overeat bread and trying to fill that void with vegetables. I think that adding the pickles and the caramelized onions are important because that’s what makes this taste like a burger. Also, I added spinach, not lettuce because I think this needs to be heated up, and the spinach heats up nicely with this dish, where lettuce wouldn’t.
These Bacon cheeseburger lunch bowls can be made with your favorite burger toppings. You don’t have to stick with what I used. These make for a very satisfying lunch. So satisfying, that you won’t feel like you need to reach for more after your meal, which I sometimes do when I am trying to be good and eat a light lunch.
I drizzled some ketchup and mustard on top of mine when I was eating it.
Bacon Cheeseburger Quinoa Lunch Bowls
- 6 ounces ground beef
- seasonings for burger
- 2 cups quinoa
- 1 cup cheese
- 4 slices cooked bacon
- 2 cups spinach
- 1 onion, grilled or caramelized
Break the ground chuck into four burgers. Add your favorite seasonings and grill your burgers to your specifications.
Cook quinoa, cook bacon and caramelize the onion.
Build your lunch bowls. In each bowl add 1/2 cup quinoa, 1/2 cup of spinach, one cooked burger patty, 1/4 cup cheese, 1/4 of the caramelized onion, a slice of bacon and pickles.
Heat each bowl in the microwave for 1-2 minutes before eating. Add ketchup, mustard, and any other burger toppings.
