Roasted Broccoli Salad

This roasted broccoli salad is an easy side dish with a perfect combination of flavors!   All you need to do is roast broccoli florets in the oven and toss them with sweet dried cranberries, buttery pine nuts, and gooey goat cheese.

If you are looking for a new side dish recipe to serve at your holiday table, look no further than this incredible roasted broccoli salad!   Roasted broccoli tastes crispy on the outside, tender on the inside, and incredible tossed with sweet dried cranberries, buttery pine nuts, and gooey goat cheese.

Ingredients

​Two 12-ounce bags of steamable frozen broccoliyou can also use fresh broccoli, but you will want to adjust your cooking time.

Three tablespoons of extra virgin olive oil  

Salt and black pepper to taste- about 1/2 teaspoon of each

​Two tablespoons of maple syrupyou can also substitute brown sugar or honey. 

1/2 cup of dried cranberries 

1/4 cup roasted pine nuts 

1/4 cup of crumbled goat cheese–  you can also use goat cheese from a log that you crumble yourself.

Optional Ingredients- if you didn’t find pine nuts,  another roasted nut would work.  Chopped almonds, pecans, or walnuts will also work.   Dried Cherries will work in place of dried cranberries.   You can use feta cheese if you can’t find gooey goat cheese,  but it will change the consistency of the salad.  Red onion will also taste great with this recipe if you want to add a bite.

Instructions

  1. Steam the bags of frozen broccoli in the microwave according to the instructions.   Preheat the oven to 375 f
  2. Open the bags of cooked broccoli and arrange them on a baking sheet.
  3. Toss broccoli with salt, pepper, maple syrup, and olive oil.
  4. Cook broccoli in the oven until it is roasted to your specifications—about 25 mins.  About 20 minutes in, add the pine nuts to the baking sheet.  You can also toast the pine nuts separately and add them at the end.
  5. Arrange the broccoli on a dish. Arrange pine nuts, dried cranberries, and goat cheese.
  6. Serve warm. If you are taking this dish somewhere, top it with tin foil or microwave it for 1-2 minutes once you reach your destination.

  6. Serve warm, if you are taking this dish somewhere, top it with tin foil or microwave it for 1-2 minutes once you reach your destination. 

This dish would be perfect for Christmas, Thanksgiving, or Easter gatherings. This is the ideal winter comfort food! This broccoli salad was eaten up quickly, and I will add this to my ever-growing vegetable side dish repertoire.

Storage

You can store leftovers n an airtight container in the fridge for up to five days. You can reheat the leftover broccoli in the microwave.

How do I toast pine nuts? 

If you choose to toast your pine nuts separately, it will only take a few minutes.

1. Place the pine nuts in a saucepan in a single layer.

2. Cook the pine nuts on medium-low heat until golden brown. It takes about 3-5 minutes. Once the pine nuts are toasted, remove them from the heat to stop the cooking process.
