Pressure Cooker Maple-Bacon Steel Cut Oats

I have owned my Instant Pot for almost two years, and I have meant to make steel cut oats in it nearly the entire time I have owned it, but finally got around to it.

Oh. My. Gosh.  You guys. Awesome.

I think the one thing that really amazes me about my Instant pot, is that it cooks some of my favorite grains super fast.  The fact that this magical device can make rice in 12 minutes and quinoa in one minute is nothing short of amazing.  I think I actually use it for these sorts of foods more than I use it for making recipes with lots of ingredients.

I love steel cut oats, but hardly ever made them because they take so long to make.  However, making them in your Instant Pot only takes 10 minutes, and these turned out nutty and delicious.

I happened to have some leftover bacon in the fridge, so I flavored my steel cut oats with it.  I usually prefer savory breakfasts over sweet.   With this maple-bacon steel cut oats, you can have both!

These steel cut oats are easy to throw together in the morning, but you can also make them the night before and heat them up in the morning.  Both ways are delicious!

Bacon-Maple Steel Cut Oats

Servings 4

Ingredients

  • 2 cups steel cut oats
  • 4 cups water
  • 2 teaspoons salt
  • 1/4 cup maple syrup
  • 4 pieces of cooked bacon, crumbled
  • cooking spray

Instructions

  1. Set your pressure cooker to the saute setting. 

  2. spray your pressure cooker pan down with cooking spray

  3. add steel cut oats and let the oats toast for 1-2 minutes. 

  4. add salt, maple syrup, bacon and water 

  5. Close the lid and set your pressure cooker to high pressure.  Cook for 10 minutes. 

  6. Let naturally release or vent.  It doesn't matter 

  7. add milk if you like and serve. 

This made for an awesome back to school breakfast for my sons.  This was not a hard sell.  They love oats, and my oldest son will absolutely eat anything with bacon!  This was a good motivator for me to actually eat breakfast.  I am often running around in the morning and I completely forget to eat.  Of course, I wouldn’t forget to eat this!
