These chicken bruschetta quinoa bowls are hearty, easy, nourishing and make a great quick dinner that my family enjoyed. I love bruschetta so much that it hurts. I would be fine with just having a traditional bruschetta for a meal, but my kids needed a little bit more convincing.
So I served my favorite bruschetta over a bed of fluffy quinoa, added rotisserie chicken and topped it with my kids favorite cheese. Crystal Farms Cheese® is a favorite in our house. This chicken bruschetta quinoa bowl was so delicious! Plus it was so easy and took less than 20 minutes to make from start to finish. I took a few shortcuts. I used a rotisserie chicken in this recipe. Rotisserie chickens are inexpensive and are a great thing to buy when you want to make a quick meal. Also, I made quinoa in my pressure cooker. Did you know that you can make quinoa in your pressure cooker in 1 minute?

I added zucchini to our bruschetta bowls because I love adding as many veggies as possible. You can add any vegetable you like to yours. I always look forward to my garden tomatoes. My tomatoes tend to be ready right as my kids are about to start school, which is awesome because there are so many fast meals you can make with them.
Chicken Bruschetta Quinoa Bowls
- 2 cups quinoa
- 3 cups water
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2-3 cups chopped tomatoes
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 3-4 chopped basil leaves
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt and pepper
- 1 rotisserie chicken, shredded
- 2 zucchini, chopped
- 1 bag Crystal Farms Cheese® Mozzarella
- 1 teaspoon balsamic glaze
- 1-2 basil leaves garnish
Rinse quinoa. Add rinsed quinoa to water and add seasonings.
Cook quinoa. If you are cooking your quinoa in your pressure cooker, you will want to cook it on high pressure for 1 minute. You can also cook the quinoa on your stove.
Prepare the bruschetta. In a bowl mix chopped tomatoes, basil, balsamic vinegar, olive oil, salt, and pepper. Set aside.
Chop zucchini and cut chicken off of your rotisserie chicken.
Build your bowls. Add a few scoops of quinoa, tomato bruschetta mixture, zucchini and chicken to your bowl. Top your bowls with Crystal Farms Cheese® Shredded Mozzarella Cheese, some extra basil, and balsamic glaze.
This meal was so good, and is filled with many flavors and much freshness! I love it when I can make a nourishing meal for my family in a matter of minutes!
