Eggs Florentine Breakfast Pizza

Do you want to know my secret to pristine relaxation in the midst of being a mom to three small boys?  I wake-up at 5:00 in the morning.  And don’t call me crazy. TWO hours of quiet every morning, drinking coffee in silence, getting some work done in peace, eating breakfast alone without interruption, enjoying a beautiful, peaceful summer morning.  Have I convinced you yet?  It is a million times worth it!  After waking up early in the morning and having this quiet time to myself, I always have a better day.

I made this eggs florentine breakfast pizza at 6:00 in the morning, does it look more peaceful to you than other things I make?  It does to me. 🙂

This eggs florentine breakfast pizza is pretty much everything. Crispy thin pizza crust, gooey feta cheese creamed spinach and of course the egg must be runny.  I love using organic; pasture-raised eggs because of the delicious taste and increased nutrition — the yolks are deeper yellow which means they have a higher Omega 3, and they are so very pretty.

Eggs are a staple in my family’s diet.  We eat several dozen eggs every week.  Not only are they healthy, filling and versatile, but I turn to eggs so often because it is an animal protein that I feel is better for the environment. At Handsome Brook Farm, they believe that the happier and healthier the hen, the tastier the egg. The chickens and hens are pasture-raised where they have full freedom to, well, be a chicken. Handsome Brook Farm hens get at least 108 square feet per bird on rotated pastures and are organically-fed, which gives the eggs a beautiful golden-orange yolk and an unmistakable flavor. Handsome Brook Farm eggs are more delicious and nutritious for us and more humane for the hens.

 

Two reasons why I tend to make eggs a lot is because they are so fast to prepare, and there are so many ways to prepare them!  I can make eggs for my family several times a week, and the dish I make is usually different each time.  I made myself this spinach florentine breakfast pizza because I prefer breakfast with runny eggs and with lots of greens included.   I was pleasantly surprised though when my kids also gobbled this up when they finally came downstairs for breakfast.

Eggs Florentine Breakfast Pizza

Servings 4

Ingredients

  • 1 thin pizza crust
  • 4 cups fresh spinach
  • 2 tablespoons milk or cream
  • 1 clove garlic
  • 1/2 teaspoon cornstarch
  • 1/4 cup feta cheese
  • 1/2 cup mozzarella cheese
  • 4 Handsome Brook Farms Eggs
  • 1 teaspoon olive oil
  • dash pepper
  • 1 teaspoon chopped chives garnish

Instructions

  1. In a saucepan over medium heat, add olive oil, garlic, spinach feta cheese, milk, and cornstarch.

  2. Cook on medium until the spinach is wilted and the cream sauce had thickened. 

  3. Arrange creamy spinach on the pizza so that there will be space available to crack eggs on the pizza.   

  4. Add mozzarella to the pizza

  5. Crack 4 eggs on the pizza and sprinkle with some pepper. 

  6. Cook in the oven at 400 degrees for 10-12 minutes or until the eggs and pizza crust are cooked to your liking.

I’m an early bird too — but we go to the gym at 5 a.m. would love to try this breakfast pizza when we get home! wowza — it would be great for a brunch with friends.

Oh you’re my hero! I’ve got a toddler and I am desperate to start a 5AM waking routine myself but I never manage it! This breakfast pizza looks incredible – so many of my favorite things and a great start to the day! though until I get myself together it may be more realistic for me to make it for dinner! 🙂
