We have had some weather surprises these past few weeks. During this time of year, my mind is really focused on Spring, and the warm weather ahead. Last weekend, my husband, kids and I were surprised when we were driving home from a morning at the gym when we saw large snowflakes falling from the sky.

Even though I have mixed feelings about snowfalls this time of year, the look on my kids’ faces was that of pure delight. My husband and I decided that we would go home and make ourselves an extravagant lunch while the kids played in the snow outside. I don’t often think of Cuban sandwiches as something I would usually make in the winter, but actually, the salty ham, melty cheese and sweet taste of pickles were comforting and perfect.

I used Mazola® Corn Oil in two different ways in this recipe. I drizzled a little of it on the sheet pan when I cooked the contents of this sandwich. I also spread a little bit of it on the bread, because I grilled these sandwiches in my stove top griddle before eating them. In addition to choosing to use Mazola® Corn Oil in this recipe, I also swapped out regular sandwich bread with sourdough bread. Sourdough bread had a much lower glycemic index than regular white bread. Also, Instead of adding mayonnaise to this sandwich, I opted for calorie-free pickles and mustard.

This roasted pork was perfect. I loved all the flavors that I drizzled on the pork before baking it. Orange juice, lime juice, cumin, and coriander made this pork flavorful and zesty. Sheet Pan Cuban Sandwiches Yield is 2-4 sandwiches


2-4 thin pork steaks. You can use thin pork chops too.

4-6 slices of ham

1/2 cup of Swiss cheese

1 can of black beans

1 red onion, chopped

2 tablespoons of Mazola® Corn Oil

juice of one orange

juice and zest of one lime

1/2 teaspoon of coriander

1/2 teaspoon of cumin

1 clove of garlic, minced

sourdough bread



Method: Preheat oven to 400 degrees. Lay the pork steaks on a sheet pan and beat them with a meat tenderizer. Add cumin, garlic, coriander, orange juice, lime juice, and lime zest on top of the pork steaks. Also on the sheet pan, arrange sliced red onions, black beans ham slices, and cheese on top of the ham. Drizzle 1 tablespoon of Mazola® Corn Oil on top of the pork steaks and red onions. Bake for 20 minutes, or until your pork steaks reach an internal temperature of 145 degrees. Remove and let the pork rest for 10 minutes. With a pastry brush, paint the second tablespoon of Mazola® Corn Oil on one side of each slice of sourdough bread. Build your sandwiches. Add 1 pork steak, a few ham slices with cheese, a few tablespoons of black beans and a few onions in each sandwich. Place each sandwich in your panini maker- or on a griddle to toast each sandwich. Add pickles and mustard to your specifications.

Oh my goodness, you guys, this sandwich was really satisfying. It is amazing all the delicious things that can be made using wholesome food! I can’t wait to make these for my friends
