Instant Pot Honey Lemon Garlic Salmon Foil Packets

It is always lovely to hear when your kids tell other people that love the food you make them.   I have been making tons of healthy instant pot recipes this year.  I have had my Instant Pot for a good year and a half, but it took me several months to get the hang of it.

All I have to say is that my kids eat very differently than I did in the late ’80s.   When I was six, I would have been most happy if my mom made Kraft Mac and Cheese with hot dog slices.  Or maybe meatloaf.  Or perhaps a can of soup with grilled cheese.

I realized today, which I do spoil my kids with food.  Not that my kids are overweight or anything.  All three of my sons are pretty small for their age.  But I spoil them with the good stuff.   I realized this last week as my kids were chowing down on large broccoli florets out of their casserole and begging for more salmon cooked in foil packets.

I love that they are so excited about eating healthy.  It makes me feel like we’re maybe doing things right.

Take these Instant Pot Salmon foil packets, for example.   These are full of fantastic flavor and topped with a little honey so that my kids will get extra excited about it.  Cooking salmon in foil packets is my favorite way to prepare salmon.   It comes out evenly cooked every time.   There is nothing more disappointing than overcooking salmon.

This recipe can be done in the oven too.  But I think that cooking this salmon in the Instant Pot did make flakier.  It was moist, flavorful, and just flaked off.  So good!

This salmon was perfectly steamed and incredibly yummy!   I love how easy this dish is.  I can’t point my finger on what it is, but there is something easier about making dinner in my Instant Pot instead of turning on the oven.  But if you would rather make this in the oven, cook these foil packets at 400 degrees for 15 minutes.

Quick kitchen tip!  If you have a larger salmon fillet, use kitchen shears to cut it into smaller pieces!

Honey-Lemon-Garlic Salmon Foil Packets 

Servings 4

Ingredients

  • 4 salmon fresh salmon filets
  • 5 tablespoons olive oil
  • 3 cloves minced garlic
  • 2-3 tablespoons lemon juice
  • 1-2 teaspoons parsley
  • 3-4 tablespoons honey
  • 1 dash salt and pepper
  • lemon slices

Instructions

  1. Mix olive oil in a bowl with the minced garlic

  2. Brush each piece of salmon with the olive oil and garlic mixture.

  3. Brush lemon juice on each piece of salmon as well.

  4. Sprinkle with salt and pepper, parsley flakes, honey and top each piece with a lemon slice.

  5. Wrap each piece of salmon up in tin foil.

  6. Place 1 1/2 cups of water in your instant pot and place the trivet in your Instant Pot- the trivet that came with it.

  7. Place the salmon packets on top of the trivet. 

  8. Close your Instant Pot and cook the salmon on high pressure for 5-8 minutes if you have a smaller piece or for 10-12 minutes if you have a larger piece. 

  9. Release pressure right after cooking time is done and eat!

did not have honey, did it with maple syrup, two frozen filet in foil pack and 1 cup jasmine rice in a ss bowl at the same time for 8min.put the ss bowl on the trivet and the packet over top, served the filet on the rice and pour the cooking juice over. it was delicious.

Can i use thawed frozen fillets? Do i need to adjust time for 2 packets? Looks great and cant wait

I would thaw the fillets. I would be afraid frozen might turn out watery. I think you can keep the same cook time, but I would adjust it a little if you have a smaller piece of fish. The piece I had was pretty thick.

Can i use frozen fillets for this recipe? Thawed? I also probably woulD only cook 2 at a time, do i need to change cook time?

If you Have several PACKETS made up, do you stack them on top of each other on the trivet?

wOW! tHESE WERE AMAZING. sO FLAKY AND MOIST….THIS RECIPE IS DEFINITELY GOING IN MY ip ROTATION! i MAY TRY IT WITH FRESH DILL AS WELL BUT IT REALLY IS DELICIOUS JUST THE WAY IT IS.
