Bloody Mary Goulash – Instant Pot Recipe

Another day, another Instant Pot recipe.  Check out my Instant Pot recipe collection! 

I saw where a blogger friend of mine posted a photo of vegetable soup on her Instagram using tomato juice as a base, and my mind started wandering.  Then the next thing I knew, I was at home making this bloody mary beef goulash.   I just loved the idea of using tomato juice as a base for a soup or a stew.

I’m actually not a tomato juice drinker, even though my dad had it a lot when I was a kid.  But the ingredients used in a bloody mary, ( I get it there are A LOT of different ways to prepare one) Worcheshire sauce, horseradish, and Tobasco just happen to be some of my favorite flavors to have with beef.  I went a little light on the spice in this recipe.  This was a weeknight dinner I was feeding to three small kids.  By all means, add as much spice to this as you like!

Before I go on, I will show you how I made this in my Instant Pot, even though I bet this could also be made in a dutch oven or in a pan. 🙂

I used cubed steak in my recipe and it turned out super tender!  I used cubed steak because I found it on sale, and that’s what I had.   You should use your favorite beef in your recipe!

Also, do you make your bloody mary’s differently?  add those ingredients to yours, and I bet you’ll love it!

In addition to eating goulash as a stew.  I also sometimes like to serve it over polenta or over mashed sweet potatoes.

 

 

 

 

 

Bloody Mary Beef Goulash

Servings 6

Ingredients

  • 2 cloves minced garlic
  • 1/2 cup chopped onion
  • 1-2 pounds cubed steak or beef of your choice
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil or butter
  • 1 teaspoon Tobasco sauce
  • 1 tablespoon horseradish sauce
  • 2 tablespoons smoked paprika
  • 2-3 large carrots, chopped
  • 4 celery stalks, chopped
  • 2 cups tomato juice
  • salt an pepper to taste

Instructions

  1. Set the Instant Pot to the saute setting.  Add olive oil, garlic, onion, and beef. Saute for 2-3 minutes.

  2.  Add the rest of the sauces, seasonings, carrots, celery and tomato juice. 

  3. Put the lid on your Instant Pot and cook for 30 minutes on high pressure or the stew setting.

  4. Cook and serve! don’t forget to add your favorite Bloody Mary garnishes!

The flavor of this broth was unreal!  I can’t wait to have more for dinner tonight!
