Vegan “Sausage” and Kale Scones and 5 ways to makes mornings more successful

Trying to get my three kids out of the house for school.

Where do I even start?¬† One thing I can tell you is that¬†every day is different.¬†¬†One day we will get out five minutes ahead of schedule, and the next day five minutes behind.¬† ¬†When you’re trying to get kids out of the house for school, every minute¬†matters.

Lunch packing, picking out school clothes, finding hats, gloves, coats, snow pants and backpacks.¬† Me saying ” Go brush your teeth!” 20 times before we head out the door.¬† Oh yeah, and they also expect me to make them breakfast, a delicious, filling breakfast at that.

Not only is it important for me to serve my kiddos a¬† healthy breakfast, but I need breakfast too!¬† I can’t even count the times I have forgotten to eat breakfast and felt myself start to “crash” around 9 AM.¬† One of my New Years Resolutions for 2018 is to eat a satisfying healthy breakfast, even if I have to eat it in the car.

Which brings me to these scones.  Veggie-filled, flavorful and filling.

I know I keep posting recipes with¬†MorningStar Farms¬ģ products even though I am not a vegetarian nor vegan.¬† I have always loved¬†MorningStar Farms¬ģ, and have eaten their products since I was a college student. I found these¬†MorningStar Farms¬ģ¬†items in the vegetarian¬†section of the frozen aisle at Walmart.

These Scones couldn’t be easier.¬† I just whipped them up in my kitchen aid mixer, and they cooked right up.¬† ¬†Since mornings are always so busy, here are five things I like to do in advance to keep my mornings as successful as possible.

5 Things to do the night before to make mornings more successful during the new year.  

  1. Having breakfast ready in advance.¬† MorningStar Farms¬ģ veggie sausage scones will help me have a healthy breakfast, so I feel full and energized for the rest of the morning.¬† Actually eating breakfast, a healthy one was a new years resoltion that I had for myself.¬† ¬†¬†MorningStar Farms¬ģ breakfast products will help with this resolution immensely.¬†MorningStar Farms¬ģ veggie sausage contains plant protein and is a great option for a balanced breakfast.
  2. Picking the kids’ clothes out the night before.¬†

Doing all these things the night before will allow me to enjoy my breakfast more completely, and feel healthier throughout my day.

Vegan “Sausage” and Kale Scones¬†

Makes 12 large scones 


3 cups of whole wheat pastry flour

2 tablespoons of baking powder

1/2 teaspoon salt

2/3 cup olive oil

2/3 cup water

1/4 cup sugar

2/3 cup chopped kale

3¬†MorningStar Farms¬ģ Original Sausage Patties cut up into pieces

Method:   Preheat oven to 400 degrees. In a bowl, mix flour, baking powder, salt, and sugar.  Add olive oil, water, kale and sausage pieces.  Mix well with mixer.  Drop 1-2 inch portions onto a baking sheet, that is either greased or lined with parchment paper.  Bake in the oven for 18-20 minutes.
