Christmas Eve at my parents’ house is perfect.  I look forward to it every year.   Sometimes they have a big crowd, and sometimes it’s a quiet gathering.  It doesn’t matter which way it goes.  I love it all.

My dad plays the perfect Christmas playlist- one that he usually spends a lot of time preparing.  My dad also runs to the Jewish deli, picks up the pickled herring, and finds the perfect wine bottle.  We sometimes play cards.  Sometimes we end up watching a Christmas movie towards the end of the night.   A fire is always lit in the fireplace, but we always have to make sure it goes out a few hours before Santa is set to arrive.

My favorite part about our family’s Christmas Eve is the food.  My mom can really put together a spread.  The food she makes is always light and flavorful. Salads, soup, vegetables, dip, smoked salmon with capers, shrimp cocktail, and always a few lighter, delicious appetizers.

These Chicken Cordon Bleu Ham Cups would fit right in her spread.  They’re mouthwatering and melty but without all that bread.  Plus, they’re super cheesy!

I used my favorite cheese in these Chicken Cordon Bleu Ham Cups.  I was introduced to Crystal Farms® cheese a few years ago, and now, it is my go-to cheese for every day and special recipes!   You can get more holiday recipe ideas using Crystal Farms® Cheese on their website.  You can find Crystal Farms® Cheese in the refrigerator section of your grocery store.

These Chicken Cordon Bleu Ham cups are super easy.  I made them in muffin tins.  My kids were a little confused but amazed that these cups were edible and made out of ham.  I cooked boneless chicken on the stove for this recipe, but you could also use rotisserie chicken too.

Chicken Cordon Bleu Ham Cups 

Yield is 12 

Ingredients 

12 slices of deli ham

2 cups of chicken – cooked boneless chicken breast or rotisserie chicken

1 clove of garlic

1 cup of Crystal Farms® Swiss Cheese

chives or green onions for a garnish

Nonstick spray

Method:  Preheat oven to 350 degrees.  Spray muffin tin with some non stick spray.  Place one slice of ham in each muffin tin.  Fill the rest of the muffin tin with chicken and top with Swiss cheese.    Bake at 350 for 15-18 minutes.  Remove from the oven and top with chives for a garnish.

Would be helpful to know what to do with the clove of garlic. I guess mince it and toss it in the cheese?
