Sheet Pan Cauliflower Au Gratin

Oh my gosh, you guys.  This Cauliflower.   

So amazing, and this reiterates why I have an obsession with pepper jack cheese.   This pepper jack cheese adds just a little kick to this dish.   Just enough kick to make the meal enjoyable, but I promise you that the kiddos will still eat this.

While some people might be traditionalists when it comes to side dishes served during the holidays, I am most certainly not.   When I host a holiday gathering, I love coming up with new side dish ideas.  Don’t worry.  I won’t touch the tradition of the Thanksgiving Turkey or the Christmas Ham!

It is almost necessary to make this cauliflower au gratin on a sheet pan.  Parts of this were so crispy and cheesy!  Amazing!

This is a fantastic way to eat your veggies during get-togethers this holiday season!  Most people have no problem eating a plate full of vegetables covered in excellent cheese sauce!

Pepper Jack Cauliflower Al Gratin 


One head of cauliflower, chopped

1 cup of milk

1/2 cup of half and half

One cup of shredded Crystal Farms® Pepper Jack Cheese, or another flavor of Crystal Farms® 

Cheese.   You will want to separate these into two 1/2 cups 

One tablespoon of butter

1-2 cloves of garlic

Method: In a saucepan, over medium heat, heat butter and garlic.  Add milk and a half and a half.  Bring the mixture to a boil.  Add 1/2 of the pepper jack cheese and stir.   Set aside.   On a sheet pan, arrange chopped cauliflower.  Pour the cheese sauce over the cauliflower and mix.  Place foil over the cauliflower and bake at 350 for 30 minutes.  Remove the foil and sprinkle the rest of the cheese on top of the cauliflower.  Set oven temp to broil and cook until the head of the cauliflower and cheese gets crispy.
