Instant Pot Hard Apple Cider BBQ Pulled Chicken and Video Tutorial

With so many binge-worthy T.V. show options these days.  How does one choose what to watch?   At my house, we have a basic cable package with about 40 channels, Our PBS app, HBO Go- that we share with a few people ( shhhhhh), CBS mobile ( also a shared family account. double shhhh)  and Netflix.

Do you want to know what typically happens?  My husband and I spend about an hour deciding on something to watch so that we can both fall asleep 30 minutes into whatever we’re watching.  Yes, we’re worn-out parents. 🙂

But last week, when my husband was out with our two older boys, I found the perfect show.

Fuller House.

Oh my gosh, with all these intense dramas on T.V. these days.  And with politics turning into a scary episode of House of Cards, day after day.  It is so lovely to sit and laugh at something so light-hearted and funny!  Plus, I get so nostalgic for a simpler time. ( Plus Uncle Jesse still has it!)

And sometimes, I want my dinner to be like this too.  Not complicated but enjoyable.   That being said, making BBQ pulled meat is probably my favorite thing to make in my Instant Pot.  Kids love it, and it couldn’t be easier.

I love hard cider.  I am not much of a beer drinker, but I like a sweet cold cider every so often.  I thought that making Hard cider pulled Chicken would be delicious, and it was!  This only took a few ingredients.   Making pulled Chicken in the Instant Pot takes much less time than a slow cooker.  I love that!

Hard Apple Cider Pulled Chicken

Ingredients

  • 3 tablespoons olive oil
  • 2 boneless chicken breast
  • 1 small caramelized onion
  • 3 minced garlic cloves
  • 1/3 cup barbecue sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 2 honey crisp apples, peeled and sliced
  • 1 bottle your favorite hard cider

Instructions

  1. Drizzle some olive oil at the bottom of your Instant Pot 

  2. Hit the saute setting.

  3. Add chicken, onions, garlic, paprika, chili powder, brown sugar, apples, and hard cider.

  4. Close the Instant Pot and cook for 20 minutes on poultry.  The Chicken should literally fall apart once cooked. 

 

This was delicious!  The family gobbled it up.  I love how easy this is!  I just threw it all together and forgot about it until supper!

Do you set the pot for 20 min? The video shows the pot set for 60. Thanks for the info!

Ha! I was cooking shredded chicken for way longer than I needed to at first. It turns out 20 minutes will work, but you can cook it longer if you want to effortlessly shred it.

yes!!!! You may want to up the cooking time for pork. When I make pulled pork in the IP, I like to cook a pork roast for 90 minutes.
