I always get a little nervous when it’s my turn to bring a dessert to pot-luck dinners.  I am going to admit something right now.  I am not a great baker.

There is just something about following directions to a tee, that is very hard for me to do.   When it comes to desserts, I like to stick with no-bake options.   Not only are non-bake desserts easier, but they are so much faster to make too!

One thing I love about these popcorn bars is that popcorn is light.  These are sweet and satisfying without leaving you super full.   Plus I used honey to get these popcorn bars to hold together instead of butter and marshmallows.  Plus I added a little salt.  Nothing can beat that salty-sweet combo!

These popcorn bars are especially delicious because I also added Oreo O’s Cereal to them!  Oreo O’s cereal turned out to be the best ingredient!  Well, because these bars now taste like Oreos!

Oreo O’s cereal has that OREO® flavor that we all love!  I purchased this cereal, along with Honey-Maid Smores Cereal at my local Hy-vee store.

Another reason why I love these popcorn bars is that I used items I always keep in my pantry.  Plus it was just a few ingredients.  There is no reason why you can’t just whip these up in a jiffy after you realize you need to bring a dish to share.

You can also make these into squares.  I just preferred them in bar form.

OREO® O’s Popcorn Bars

8 cups of popped popcorn

3 cups of Oreo O’s cereal

1/2 cup of oatmeal- not instant

1/3 cup of honey

1/3 cup of brown sugar

1/4 teaspoon of salt

Method:  Place popcorn, oatmeal, and corn in a bowl.   In a measuring cup, heat honey and sugar and salt together in 3-4 30 second increments and stir between each run. Until the sugar has disintegrated into the honey.   Pour the syrup over the popcorn mixture and mix, until the popcorn mixture is coated with the honey.   Pour batter into a nine by 13 baking dish and chill in the fridge for 1- 2 hours.   Remove and cut into bars or squares.

These Oreo O’s popcorn bars are seriously delightful.  You should make your own!
