Chocolate-Banana Breakfast Rice Pudding

On Wednesday,  we will have big changes happening in our house!   That’s right, in two days I will officially have a Kindergartener!  And I am already mentally preparing myself in hopes that I will survive the day without any tears.   I keep thinking, how did we get here already?

I remember a time, when I thought that he was going to be a baby forever!  Would I ever get to sleep again?  Would I ever get to take a hot shower ever again?  Would he ever survive my first time away from him?  When will he start talking? When do we move him to his room?  How to I get him to eat his vegetables?

And yet, here we are.  I have got this five- year- old.  He’s confident, opinionated, hilarious, and all grown-up.  I even sent him across the street last week to get the mail.  By himself.  And next week, just like that, he’s going off to school.

As a food blogger, you better believe that I will make sure he eats a healthy breakfast before he leaves for school.  That brings me to this super quick and easy chocolate-banana rice pudding.

This rice pudding is such an easy, and filling breakfast.   I added nuts, pumpkin seeds, chia seeds, and bananas.  I made this tasty rice pudding with Sir Bananas® Chocolate Bananamilk.

Sir Bananas® Chocolate Bananamilk is a milk that the whole family will love.  It comes in two flavors. Sir Bananas® Bananamilk and Sir Bananas® Chocolate Bananamilk.  I used Sir Bananas® Chocolate Bananamilk to make this rice pudding, but I am sure you could use either flavor.   This milk is made with no artificial colors or sweeteners.  It is just sweetened with real bananas.  This milk is just bananas.

I made this chocolate banana rice pudding in my pressure cooker.   Making rice pudding in the pressure cooker only takes a few minutes.  Perfect for a quick school-day morning breakfast.

Chocolate-Banana Rice Pudding  Makes 4-6 servings

Ingredients 

1 cup of aborido rice

4 cups of Sir Bananas® Chocolate Bananamilk

2 eggs

1/2 teaspoon salt

1 teaspoon pure vanilla extract

Toppings

banana slices

walnuts

chia seeds

pumpkin seeds

Method: In your pressure cooker.  Add rice, milk, salt and vanilla.  whisk in eggs.   Set your pressure cooker to low pressure, or place it on the rice setting.  Cook for 12 minutes.  Vent.  Serve up the rice pudding in bowls and add toppings.
