Modelo and Lime Marinated Grilled Chicken

Lately, I have been finding any excuse I can to squirt a lime on my food.   Stir fry, salad, salad dressings, smoothies, chicken, and of course, I have always liked to put limes into my beer!

This Modelo, honey and lime marinated grilled chicken is super refreshing and can be made for a meal or an appetizer.   I also made some cilantro-lime sour cream for dipping.    This was such a hit with my family, and was a great reminder that summer celebrations are just around the corner!

These delightful little chicken kabobs can be made for summer holiday gatherings, quiet dinners out on the deck, family dinners, and can be made into the perfect bite-sized appetizer to eat, while watching your favorite sporting event.

This Modelo Honey-Lime Chicken is easy. ¬†I just marinated the chicken in the beer, honey and lime for about an hour. ¬†Then I stuck the chicken on kabob sticks and grilled them. ¬†¬†You don’t want to marinate this chicken for too long, or the chicken might cook.

Honey-Lime Modelo Chicken Kabobs   Makes about 12 kabobs


6-10 boneless chicken tenders

1 Bottle or Can of Modelo

juice of 2 limes- one for the marinade and one for drizzling lime juice over the cooked chicken

2 tablespoons honey

1 clove of garlic

salt and pepper to taste

1 teaspoon of dried cilantro

optional: crushed red pepper

Cilantro-Lime Sour Cream


1/2 cup of sour cream – you can also use Greek Yogurt

juice of 1/2 lime

1 teaspoon dried or fresh cilantro

1/4 teaspoon salt

Method: In a dish, marinate chicken in beer, lime, garlic and honey for about an hour.   Cut each piece of chicken in 1/2- lengthwise and place the chicken on a kabob stick.  grill until the chicken is cooked to your liking- about 3 minute on each side.   Squirt lime juice on the chicken and sprinkle the chicken with a little salt and freshly-ground pepper.  Garnish with cilantro and/or crushed red pepper if you choose.   Mix up the ingredients for the cilantro-lime sour cream and dip your chicken.
