Avocado Toast Lunch Kits & a Video Tutorial

I try not to pay attention to all the craziness that is going on in the news.  Okay, let me rephrase that.   I actually do pay attention to the crazy things that have been happening in the news lately,  I just try not to write about such things on this blog.  Why?   Well, the 24 hour news cycle, people’s Facebook opinions and the opinions of everyone around me is just exhausting!    So, I am going to keep this blog about the food. Deal?

That being said, I saw an article floating around Facebook last week about how millenials should stop buying avocado toast, and save up for a house.   Then, I saw a bunch of open letters floating around, from millenials.  – on why they love avocado toast and enjoying life.   As an ” old” millenial, I must say touche to that!

A side note.  I am 34 years old.  I really don’t get how/why people my age are getting grouped together with the millenial generation.   I don’t have a problem with it, but I don’t get it.  

Anyway, these avocado toast lunch kit’s are inspired by all the articles involved in this rather silly news subject.  But honestly, it is really nice to see something somewhat light-hearted floating around social media.  

Here is a way you can have the best of both worlds!  You can have your avocado toast, AND you can save a little bit of money by preparing it by yourself!

A few things I would like to say about these avocado meal kits

  1.  I know you see a lot of meal prep kits being made days in advance.  Not the case with these.  My advice would be to make these the morning of.   I made, two at at time, one for me, one for my husband.  This way I used up one avocado.
  2. You need to pack up your avocado correctly so it doesn’t get brown.   I like using Press and seal, but you can use plastic wrap too.   You can also squeeze a little lemon juice on the avocado too.
  3. Don’t make your kit like mine.  I happen to like cilantro, sesame seeds, chia seeds and lemon juice on my avocado toast.  Pack your preferred avocado toast toppings.  There are so many good ones!

I really think that the addition of citrus.  Either lemon or lime to avocado toast really makes a huge difference!

Ok one thing I have not talked about yet.  The bread.   What bread do you make into this toast?  Honestly, I don’t think it matters.  It does need to be toast though.

One last thing.  I did an a little trial, to see how long the avocado would stay green when wrapped in press and seal.   My avocado stayed green for 24 hours in the fridge.
