Time for a new “snack on the go” recipe! And this one is especially tasty.
I was actually trying to organize my pantry last week, when I realized that I had 4 bags of chia seeds! My husband and I just keep buying them without telling each other, then they get lost. We have some serious pantry organization woes in our house. too many wonderful ingredients. not enough room. I guess you could consider us lucky.
My husband Greg and I got into Chia seeds a few years ago. Greg likes letting them soak in water overnight, then drinking it in the morning. I like to add them to smoothies. You can bake them into granola or really anything. They don’t have much of a taste to them, but chia seeds are wonderful. When you soak chia seeds in a liquid, they expand, and you get a pudding-like texture.
I soaked chia seeds in Silk® Vanilla Protein & Nutmilk Almond Cashewmilk & Pea Protein overnight to achieve this pudding. This made a fantastic -on-the-go breakfast and would make a delicious snack too!
Silk®Vanilla Protein & Nutmilk Almond Cashewmilk & Pea Protein and Silk® 2g Sugar Protein & Nutmilk Almond Cashewmilk & Pea Protein are new products by Silk®, and they are now available at Walmart. I picked up mine, while shopping at Walmart. I used the Silk® Vanilla Protein & Nutmilk Almond Cashewmilk & Pea Protein variety. But I think that either flavor would work with this recipe.

Vanilla Chia Seed Pudding Pops Yields 6 pops
Ingredients
1 1/4 cups of Silk® Vanilla Protein & Nutmilk Almond Cashewmilk & Pea Protein
1 tablespoons of chia seeds
2 teaspoons of maple syrup
1 teaspoon of pure vanilla extract
Method: Mix all of the ingredients together in a bowl. Cover and let marinate in the fridge overnight. Remove pudding from fridge, use a funnel to insert the pudding into the individual baggies. You can look for silicone smoothie containers in addition to these plastic bags.
These made the perfect on-the-go breakfast for my husband and I. I can’t wait to make them again. I have been really into meal prepping lately.
