For the last 10 weeks, I have participated in a wellness challenge with a group of other Iowa Bloggers,  a program called Live Healthy Iowa from the Iowa Food and Family Project.

You can read about the other Iowa Bloggers who participated in this challenge Here and Here.

I find, that holding myself accountable is the key to staying active.  I loved being able to log into Live Healthy Iowa and track my progress.   I also belong to a FitBit group, that is a friendly, weekly stepping competition.   Here is the article I wrote at the start of this challenge about Getting my steps in.

Another way I try to stay healthy, is preparing delicious healthy food at home.   I have gotten into meal prepping this year.  I actually love it, and I have inadvertently, lost some weight because of it too.   It is really motivating to eat healthier- when you have delicious, already prepared lunches waiting for you.

I created a video for you, on how easy it is to prepare an Iowa favorite,  ” Maid Rite” loose meat sandwiches in a perfect lunch kit.

Can we discuss “Maid Rite” loose meat sandwiches for a second?  I never heard of these sandwiches until my Freshman year at Loras, when all the students from Iowa would get really excited every time they were served in the cafeteria.  ( grew up in Illinois.)

If you’re not from Iowa, or have never had one of these loose meat sandwiches, you’re missing out.  They’re not quite like a sloppy joe.  They’re loose meat, with lots of wonderful seasonings.  They’re usually beef, but I made Turkey Maid Rites for you today.

I also added some veggies and ranch in this lunch kit.  Iowans love ranch. for the last year or so, I have started making Greek Yogurt Ranch Dip all the time!  You can usually find ranch seasoning, specifically for Greek Yogurt, or you can make homemade ranch seasoning too!

Turkey “Maid Rite” Loose Meat Sandwiches

1 pound of ground Turkey

1/2 onion chopped- I used a red onion

1/2 cup of chicken broth

3 teaspoons of worcestershire . ( or if you’re like me, I might add more of this.)

1 teaspoon of dijon mustard

1/2 teaspoon cider vinegar

2 tablespoons of steak sauce

Method: In a saucepan, add turkey and brown.  Drain if you want to.  Add chopped onion, chicken broth, worcestershire, mustard, vinegar and steak sauce.   Cook for about 20 minutes, or until the seasonings have settled into the meat to your satisfaction.

This was such a delicious way to enjoy some serious ” Iowa flavors.”

Okay, now for the fun part.   In celebration of this Live Healthy Iowa challenge, the Iowa Food and Family Project is helping me giveaway a $25.oo gift card to Scheels.
