I was a little reluctant to post this recipe. I mean, seriously, It is tough to make meatloaf look pretty in a photo. Especially this meatloaf. This meatloaf is made in a slow cooker. This meatloaf is so moist that it might fall-apart just a little bit. I was happy to be able to get this onto a plate without it falling apart.
But do you know what? It is just incredible. Yes. I just referred to meatloaf as impossible. I know.
When I was a kid, my mom made a delicious meatloaf. I always looked forward to it. I especially looked forward to bringing a meatloaf sandwich with me to school for lunch.
I also wanted to make this meatloaf gluten-free. My family eats gluten. I have quite a few family members and friends who eat gluten-free, and I wanted to make a recipe I would be able to share with them.
I love my slow casserole cooker. I used it to make this meatloaf. You don’t need a slow casserole cooker, though. Any old crockpot will work correctly.
I used oatmeal as the filler for this meatloaf. If you have a gluten intolerance, you may want to make sure that you get gluten-free oats.
This recipe makes one meatloaf. I was hoping for leftover meatloaf when I made this, but my kids devoured it. There was just a little bit for my husband to bring to work the next day. Next time I will have to make two.
Gluten-Free Crock Pot Meatloaf
Ingredients
2 lbs of ground beef
1 cup of oatmeal- gluten-free oats if needed
Two eggs
1/2 cup of milk
1/2 small onion- chopped
Two celery stalks- chopped
1-2 garlic cloves- minced
3/4 cup of parmesan cheese
2 -3 tablespoons of ketchup
salt and pepper
Meatloaf Topping
1/2 ketchup
One tablespoon of maple syrup
1-2 teaspoons of yellow mustard
Two tablespoons of Worcestershire sauce
Method: Mix all of the meatloaf ingredients in a bowl. And form them into a loaf in a slow cooker. Mix the topping and spread the topping over the top of the meatloaf. Cook on low for 6 hours or on high for 3-4 hours. Remove from crockpot and enjoy it.
I had gone ten years without ever attempting a meatloaf. Everyone has a meatloaf recipe that they love. I think it is the parmesan cheese and cooking this in a slow cooker that makes a massive difference in this flavor.
I can’t wait to make this again! It is so satisfying when my kids eat all their food!
