Snacked-Sized Warm Southwestern Greek Yogurt Dip

We have been back to school for three whole weeks now. I have been making school lunches for the first time, driving both of my kids to and from school multiple times a day, and attending Suzuki cello lessons with my oldest two days a week too.

We’re busy, and i don’t think anyone in our house is having trouble sleeping at night. When my boys get home from school, they are really hungry!

A few days last week, I whipped up these José Ole chicken and cheese quesadillas for them to snack on. My kids really love quesadillas, and these are really easy to make. You can bake them in the oven, pan fry them or even microwave them if you want them really fast. I baked them in the oven, and they turned out really crispy and melty.

José Ole has a nice variety of frozen meals and snacks that are tasty and convenient for back-to school. I love that these weren’t too greasy, and that you could tell that you were eating white meat chicken.

Last week, I also made the kids a warm, Greek Yogurt Southwestern dip for them to dip their quesadillas. My boys love Greek Yogurt Dip, and I have come to find that Greek Yogurt is a really great healthy alternative in warm dips.

This dip is snack-sized. I just used a small ramekin to make it. I spent about five minutes mixing the ingredients, and I warmed it in the microwave. This dip is really flavorful. I just mixed up a small amount of taco seasoning, and added some cheese and corn to the Greek Yogurt too.

Snack-Sized Southwestern Warm Greek Yogurt Dip ( makes 1/2 cup)

Ingredients

1/3 cup of plain Greek Yogurt

2-3 tablespoons of frozen corn- thawed

1/4 cup of cheddar cheese- or a cheese of your preference

Homemade Taco Seasoning

1/4 teaspoon of chili powder

1/8 teaspoon of garlic powder

1/8 teaspoon of onion powder

dash of cumin

dash of oregano

dash of sea salt

dash of paprika

Method: Mix together taco seasoning in a small bowl. Set bowl aside. In a small ramekin, mix Greek Yogurt, corn, and cheese. Microwave in 20 second increments until your dip is hot and bubbly to your liking. You can also bake it in the oven. I garnished my dip with cilantro.
