A few times a year, my husband’s roommates from college get together. When we do, there is always a lot of food and drinks. My friend Bridget is known for bringing her signature appetizer, cucumber sandwiches to almost every get-together. I always look forward to her cucumber sandwiches, and I still eat too many.
Nowadays, many of my peers and family members eat a gluten-free diet. I wanted to create a gluten-free version. I made these gluten-free cucumber bites using Van’s Lots of Everything Crackers. I found them at Target. Right now, you can obtain a coupon for Van’s crackers using the Cartwheel app.
I love all the flavors in cucumber sandwiches. Garlic. Dill. Onion. Plus, it is mixed with cream cheese. What’s not to love?
Gluten-Free Cucumber Sandwiches ( Makes 20-30 bites)
Ingredients
Three small English cucumbers- chopped into rounds and dried with a paper towel
One package of Van’s lots of everything crackers
One package of cream cheese
One teaspoon of dill weed
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
dash of sea salt
Method: In your mixer, mix cream cheese with dill, garlic powder, onion powder, and sea salt. Spread cream cheese mixture onto each cracker and top with a piece of cucumber.
This is such an easy appetizer, and no cooking is involved! Cucumber sandwiches are so good! These were crispy and delicious!
