Gluten-Free Rubarb Crisp Greek Yogurt Popcicles

Last weekend, I saw that my local Hy-vee was selling rhubarb.   Even though it was still a little chilly, I decided to bring some home so I could make a yummy dessert sauce.  Similar to the sauce my mom used to make.

Another thing I have been wanting to make are some homemade popcicles.  I just got these new popcicle molds that I wanted to try out.  I also own the molds on the right Love them both

This rhubarb sauce is super sweet.  When you mix it with tangy plain Greek yogurt, you get a perfect combination.  Plus, baked oats with this rhubarb sauce for it to taste like rhubarb crisp.  Oh man, this was such a tasty treat!

A few days ago, I make a few batches of gluten-free rhubarb crisp.   We had one batch a la mode that night.   I saved the second batch to make these popcicles.   Do you want to know something funny?  The exact day that I was making these yogurt pops, my sister-in-law was making these Rhubarb Custard Bars.   OMG you need to check them out!

Gluten-Free Rhubarb Crisp Greek Yogurt Bars 

Rhubarb Tapioca Sauce 

Ingredients 

6-8 stalks of rhubarb

4 teaspoons of minute tapioca

1 cup of water

1 cup of sugar

Method:  Place all the ingredients in a saucepan over low to medium heat.  stir until the rhubarb cooks and tapicoa disinigrate into the water and sugar.

Gluten-Free Rhubarb Crisp 

Ingredients 

1 1/2 cups of oatmeal

1/4 cup of brown sugar- or maple syrup

dash of salt

2 tablespoons of coconut oil

2 cups of rhubarb tapioca sauce

Method:  Place the rhubarb sauce in a baking dish.  Mix oatmeal, brown sugar and salt in a bowl.  place the oatmeal mix over the rhubarb sauce.  arrange coconut oil sporadically over the crisp.  Bake in the oven at 350 for 25 minutes.

Rhubarb Crisp Greek Yogurt Bars 

Ingredients 

1 pan of rhubarb crisp- cooled in the fridge

1 container of plain Greek yogurt

Method:  place some Greek Yogurt into the popcicle mold.  Followed by some rhubarb crisp, followed by some more Greek Yogurt. Etc.  until the popcicle mold has been filled.  freeze for 4-6 hours.  remove from freezer and enjoy.

These were delicious!  If you prefer your Greek Yogurt sweeter- add some honey or sugar to the Greek Yogurt.  This was an amazing treat the other night after a really long walk.  I can’t wait to make more popcicles this year!
