Greek Yogurt Ranch Mashed Potatoes- Instant Pot

I have had a little obsession with Greek Yogurt ranch dip as of late.  I am a little embarrassed at how much I have been consuming.  I have been eating it with baby carrots.  with bags and bags of baby carrots.

We eat tons of Greek yogurt in our house.   I have been into making homemade ranch seasoning mix and making Greek Yogurt Ranch Dip.  It is really guilt-free, and make the perfect snack!

 

Last January, I made this Greek Yogurt Crispy Baked Chicken and it was a hit.   Last week, I decided to try making Greek Yogurt Ranch mashed potatoes.  And yes.  also delicious.

The coolest thing about these mashed potatoes is that they are creamy and flavorful, but they don’t have any butter in them!

Greek Yogurt Ranch Mashed Potatoes ( Serves 6-8)

Ingredients 

6-8 Yukon Gold Potatoes

12 ounces of Greek Yogurt – or less

Greek Yogurt Ranch Seasoning 

1 teaspoon pepper

1 teaspoon salt

1 tablespoon Dill weed

1 tablespoon of onion powder

1/2 teaspoon dried minced garlic

3 tablespoons of dried parsley

Method: Make Greek Yogurt ranch dressing by mixing the ranch seasonings with greek yogurt.  Let the ranch sit in the fridge for about 30 minutes.   You won’t use all the ranch in the mashed potatoes- save some for carrot dipping.   Cut Yukon Gold potatoes into pieces and boil them in water until they are soft.  Place the potatoes in your mixer with your desired amount of Greek Yogurt Ranch.  Whip the potatoes until they are a consistency you like.

Instant Pot variation: Put 1 cup of water in the bottom of your instant pot, followed by Yukon gold potatoes.  Place lid on Instant Pot and seal.  Cook on high pressure for 12 minutes.  Vent right when the cooking time is done.  Your potatoes should be soft.  Mash them with a fork or a large spoon.  Stir in Greek Yogurt Ranch.

I have not tried Greek yogurt in potatoes yet and I have tried it in so many things. Your recipe shows me how well it would work in mashed potatoes.
