For a while, I was posting healthy cookie recipes without sugar. Instead, I was adding maple syrup or dates. But do you know what makes a cookie taste good? Brown sugar.
Let me explain. Over the last few years, my sweetness pallet has changed. I can no longer get a specialty drink at Starbucks without getting a sugar headache. I can no longer make a smoothie with really ripe bananas. And when I see a recipe for sweets that calls for cups of white sugar, I can’t even.
When I add a moderate amount of brown sugar to a cookie, I get a delicious tasting cookie. Not too sweet, but yet my kids still love the taste- and I do too.
These flourless oatmeal raisin cookie bars are perfect. They’re chewy, just sweet enough, and have loads of raisins in them. Adding chocolate chips would be awesome as well. Flourless Oatmeal-Raisin Cookie Bars
2 cups of oats
1/2 cup of brown sugar
1/4 cup of coconut oil
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 teaspoon of vanilla
1/2 teaspoon of salt
Two teaspoons of milk
Two eggs
1 cup of raisins
Method: Preheat oven to 350 degrees. In your mixer, mix all the dry ingredients, followed by the wet ingredients. Add raisins. Pour mixture into a 9×6 pan or a larger one- but they will be thinner. bake at 350 for 20-25 minutes.
I will make these again for sure. Wanna know a secret? These an excellent breakfast. Less sugar than your average breakfast cereal!

Cookie bars I can eat for breakfast? Don’t mind if I do. 😉 I totally agree with you on the sweetness pallet thing. I can always tell when I’m eating too much sugar, because things start needing more and more of it to taste properly sweet. When I cut back, natural sugars are so much more potent!
