Skillet Pepperoni Pizza Zoodles

It was lunch-time yesterday, and I had several zucchini in my fridge, staring at me.

I decided to try a new, low-carb pepperoni pizza recipe.  These pepperoni pizza zoodles took only a few minutes to make and tasted just like pepperoni pizza.  This was a fabulous lunch.

Zoodle Skillet

I love my vegetable spiralizer.  I use this one.   These noodles just take a minute or two to make.

Zoodles take hardly any time to cook. ¬†I have found, that¬†sauteing them in a skillet, until they turn tender usually does the trick. ¬† Once the zoodles turned slightly tender, I added pasta sauce and let the mixture bubble for a few minutes before adding the “pizza toppings.”

Pepperoni Pizza Zoodles

Ingredients

1 large zucchini

1 clove of garlic

2 tablespoons olive oil

salt and pepper to taste

1 cup of pasta or pizza sauce

1/2 cup of mozzarella cheese

1/4 cup of pepperoni slices

other pizza toppings

Method:¬† Make Zoodles using a vegetable spiralizer. ¬† In a skillet, add olive oil and 1 clove of garlic, minced. ¬†cook for a minute or two. ¬†add zoodles and cook until the zoodles are slightly tender. ¬†add pasta sauce and cook until the sauce is bubbling. ¬† add cheese, pepperoni and any other “pizza toppings” you like. ¬† Serve.

I absolutely love zoodles.  I wish I remembered to make them more.
