There is no need to buy an expensive gluten-free baking mix if you want to make gluten-free cornbread for your holiday spread or for your bowl of chili. To make this cornbread less gritty, I pulverized the cornmeal in the food processor- and thus, turned the cornmeal into more corn flour. This cornbread was to die for. It was moist, crispy on the outside, and wasn’t the least bit gritty. You will love the flavor of this cornbread!

Coconut oil – olive oil or vegetable oil will also work with this recipe.

Gluten-Free- Coconut oil Cornbread
- 2 cup cornmeal grind in a food processor before using
- 2 eggs
- 1.5 cups plain greek yogurt
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 tablespoons sugar
- 1 cup whole milk
- 4 tablespoons melted coconut oil
