At my lame attempt to celebrate the Superbowl last sunday, I made a little snack for my husband and kids. You see, we usually watch the Superbowl, but we’re not really NFL people. Although it turns out that seeing Lady Gaga sing the National Anthem was worth watching the game.
I have been really into making healthy dips out of ricotta cheese lately. did you know that Ricotta Cheese has 1/2 the calories of cream cheese? It is a great swap for a healthier dip.
I used quinoa hot cereal flakes in this dip in order to achieve a blueberry muffin feel. You can usually find these in any grocery store with an organic department. This dip only has a few ingredients and tasted really good. My husband couldn’t get enough of this and said ” Wow. This can’t be healthy.” LOL.
Blueberry Muffin Ricotta Dip
One 15 ounce container of Ricotta Cheese
1 cup of fresh blueberries
1/4 cup of hot quinoa cereal. or something similar ( this is for the blueberry muffin texture. you can omit this if you like)
2 tablespoons or maple syrup- or another sweetener
1 teaspoon of non alcohol pure vanilla extract
1 teaspoon of lemon juice or pure lemon extract
Method: Blend all of the ingredients in a blender. Serve.
This was a big hit. It actually reminded me of Blueberries and cream instant oatmeal, which was one of my favorites as a kid.
