Crispy Baked Greek Yogurt Ranch Chicken

Adults and kids alike will devour these homemade chicken strips!  These delicious crispy chicken tenders have a short prep time and cook up in the oven fast.   This easy recipe can be made quickly any day of the week.   All you need is skinless chicken breasts, Greek Yogurt, a ranch packet, and breadcrumbs!

When I was a kid, my mom always made Corn Flake Chicken.   It was my favorite.  She would dip the chicken in mayonnaise, coat the chicken with corn flakes and bake it until it was super crispy.  Some people freak out a bit when they think about using mayonnaise in a chicken recipe.   But think about what mayonnaise is?  Oil and Egg.

I have been making ranch dip with Greek Yogurt Instead of Mayonnaise for years now.    Greek Yogurt Ranch makes the chicken moist and super tangy!

Ingredients needed for this recipe

Boneless skinless chicken tenderloins, trimmed.

One cup of Greek Yogurt 

One Ranch seasoning packet – or you can make your ranch seasoning using dried dill, chives, garlic powder, onion powder, salt, black pepper, and parsley. 

two cups of Panko Breadcrumbs

Optional ingredients to enhance the flavor: parmesan cheese, cayenne pepper, or buffalo sauce.

Equipment needed 

Sheet Pan lined with parchment paper or sprayed with cooking spray

Two shallow bowls for dipping your chicken

This recipe is easy.  It only takes a few minutes to coat each piece of chicken—the total time to make this recipe is under 30 minutes.

Instructions

  1. Preheat oven to 350 degrees
  2. If using larger chicken breasts, trim them down to chicken tender size.
  3. Set up a dipping station.  Greek Yogurt and Ranch seasonings in one shallow bowl and bread crumbs in a second bowl.
  4. Dip chicken in the Greek Yogurt Ranch, followed by the breadcrumbs.
  5. Arrange chicken on a baking sheet and bake in the oven for 25 minutes.
  6. Remove the chicken from the oven.  Make sure the chicken has reached an internal temperature of 165 degrees.  Serve.

Just like any time I bake the crispy chicken in the oven, my kids gobbled this up.   I loved the ranch flavor.  It was so tasty.

In your salad dressing aisle, look for the powdered ranch packets. Hidden valley has a new one that specifically goes with Greek Yogurt. 🙂
